Vegan Chocolate Coconut Doughnuts
- 1 1/4 cups flour
- 1 1/4 cups sugar
- 1/2 cup cocoa powder
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1 1/4 cup non dairy milk
- 1/3 cup oil vegetable or canola oil
- 1/2 tbsp apple cider vinegar
- 1/2 tbsp vanilla extract
- 1 cup unsweetened coconut shreds
Icing Recipe: 1/2 cup shortening, 1/2 cup vegan butter, 1 1/4 cup of confectioners sugar, 1 tsp. vanilla, 1/4 tsp vegan milk. Mix together well.
Whisk dry ingredients in one bowl (flour, sugar, cocoa powder, salt, baking soda, and baking powder.
Whisk wet ingredients in another bowl (milk, oil, vinegar, and extract.
Pour wet ingredients into dry ingredients and mix , don't overmix.
Grease doughnut pan with oil and cook in preheated oven of 375 degrees for about 15-20 minutes until doughnuts are ready.
Add icing and coconut.
