So I was inspired this weekend. I went to a festival. Usually, I indulge in a perfectly crafted polish sausage drenched in onions and peppers. Needless to say plans changed this year. Instead of spiraling down into disappointment, I sprung into action to make one of my favorite festival, fair foods. I also had a mini epiphany…. I think I want to start making vegan food for others.
Pepper & Onion Vegan Sausage
- 1 Field Roast Apple Sage Sausage
- 1/2 cup sliced onions
- 1/2 cup bell pepper
- hot dog bun
- 2 tbsp. olive oli
- pinch himalayan sea salt
Heat 1 tbsp. of olive oil and sauté onions and peppers for 4-5 minutes or until soft.
Remove cooked onion and pepper and set to the side. Add 1 tbsp. of olive oil to the pan and cook sausage. Add Himalayan sea salt. Shake pan and turn sausage to fully cook and not burn for 5-6 minutes or until golden brown on all sides.
Place cooked sausage in bun, top with onions and peppers. I like mine with mustard. Enjoy!
