Easy Vegan Mashed Potatoes
- 3 russett potatoes
- 1/2 cup non-dairy milk (I use rice milk)
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp vegan butter (I use earth balance)
- 1/2 cup green onions
Boil potatoes 20- 25 minutes until soft.
Remove from heat and drain. Smash potatoes well.
Add milk, salt, pepper, and butter. Mix well
Garnish with green onions and enjoy.
