Vegan Cheese Nachos! I so love nachos. This is definitely my go to when I’m feeling blue from trying vegan recipes that don’t work. Get this, the vegan cheese is made out of potatoes. You can add as many toppings as you like. I’ve tried with green onions and sautéed onions before and it was totally the bomb. Hey, have fun with this one!
My favorite part about this recipe is the guacamole, here’s a simple recipe: mash avocado, add 1 tbsp. of lemon juice, 1 tsp. of dried cilantro seasoning, and 1 tsp. of sea salt and mix together
Vegan Cheese Nachos
- 3 peeled potatoes
- 1/3 cup olive oil
- 1/2 cup water
- 1 tsp salt
- t tbsp lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- tortilla chips
- guacamole (I make mine fresh)
- cooked black beans
Boil potatoes for about 25 minutes or until soft.
Blend in blender: cooked potatoes, olive oil, water, salt, lemon juice, garlic powder, and onion powder.
Make your nachos layer by layer: tortilla chips, kale, black beans, vegan cheese, guacomole and salsa.
