Vegans make the best salads. This one is no exception. I love quinoa. The red quinoa is known to be the healthiest. I brought a container of organic girl salad and topped it with quinoa, pecans, avocado, tomatoes, cucumbers and homemade vinagarette. Just wonderful, I feel heathier by just typing all of that. Red Quinoa & Avocado Pecan Salad
Ingredients
- 1 bagged salad I use organic girl
- diced tomatoes
- diced avocados
- sliced cucumbers
- praline pecans I use Publix brand
- cooked red
Instructions

Add all ingredients and top with your favorite dressing

My vinagarette: whisk together 1/2 cups of olive oil, 1 tbsp.of apple cider vinegar, 1 tbsp. of lemon juice, 1 tbsp of sugar, 1/2 tsp of minced garlic and salt, pepper, oregano, and smoked paprika to season.
