It’s been a long time since I posted! Being VEGAN is the best thing ever! Two years and counting. This Tempeh, Lettuce & Tomato sandwich is quick and easy and sure to please the pickiest eater. Miss bacon… here some fakin bacon……
This is my go to recipe if I don’t have a lot of time on my hands… you can fancy it up if you want with Ciabatta bread, garlic aioli, and avocados. If you don’t have time to be great this will definitely suffice.
Tempeh, Lettuce, & Tomato Sandwich
- shredded lettuce
- sliced tomatoes
- smoked tempeh fakin bacon usually at Publix or Whole Foods
- 1 tbsp. chia seeds optional
- 1/2 tbsp. olive oil & vinegar optional
- vegan mayo
- salt & pepper to tast
Heat olive oil and pan fry tempeh until brown. (about 3-4 minutes per side)
Toast bread lightly.
Add all ingredients to make sandwich and enjoy
