Praise Dancer’s Rock Vegan Life! Best Vegan Chili Recipe

Vegan or not, you will love this recipe. I have three children and they love it too, so add this to the list of KID APPROVED Recipes. This recipe is also fulfilling, the words stuffed turkey comes to mind, but I’m not sure that is politically correct because it’s a vegan meal…anyhow!

For all the VEGGINERS, this is a great recipe for MEATLESS Mondays.

It is also a good potluck dish!!! The recipe features a lot of healty packed ingredients. If you want to be ALL EXTRA... you can cook your beans rather than use canned beans and make fresh diced tomatoes! I paired this dish with some good ol’ vegan cornbread! Hope you enjoy!

Best Vegan Chili Recipe

  • 1 16 oz canned kidney beans
  • 1 16 oz canned black beans
  • 1/2 sliced yellow onion
  • 2 16 oz cans of fire roasted tomatoes
  • 1 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp smoked paprika
  • 2 cups cooked jasmine rice
  1. Heat olive oil over medium heat. Lightly saute yellow onion.

  2. Add all ingredients: kidney beans, black beans, fire roasted tomatoes, chili powder, cumin, salt, pepper, and smoked paprika and cook over medium heat for 8-10 minutes. 

  3. Serve over jasmine rice.
